L'Olinda Oil Mill
The factory oil mill is the last, important investment. As in the ranches, to guarantee the highest quality and provide the best warranties to the customer, it's essential controlling the whole productive process. The grinding is one of the basic phases which, aiming at top quality, can't depend on other people's choice.
In San Marcello, at the center of the olive grove, has been built an almost 300 sq mt structure. Besides the actual oil mill (i.e. the place in which the oil extraction occures) has been made a room for defoliation and the cleansing of the olives, an air-conditioned for oil preservation (in stainless steel boxes, under nitrogen), a wide and comfortable sampling room with a whole glass wall which allows a complete view of the labour phases and at last a warehouse for tools and materials necessary for the plantation.
The structure is self-sufficient from the energy point of view (is ergized by a 23 Kw photovoltaic system) and is been made a basin to collect rainwater (about 300 cubic mt) which in the thirst periods becomes an essential resource for the vigor and life of the olive trees.
Also as environmental choice has been bought an equipment which allow to divide the kernel from the residues and so to get the wooden part of the olive back, i.e. the stone. Basically over a third of the waste material is retrieved which becomes a valuable biomass (also beacuse of its high caloric power) to energize heaters, stoves and furnaces. The strucure has a complex labour water purification system.

MFF is a young biologic Company, run by youngsters, who made a clear choice of life. It was born in 2003 as game ranch for the repopulation (pheasant, partridges, rock partridges and quails). The "engine" is Luca who, after high school, signed up Agriculture studies and, as a student, tried to do what he learned.
The ranch is in Jesi, in via Agraria 37, in a two hectars field, owned by the family. MFF also has other three proprietary fields reaching a total amount of 26 hectars (all with olive trees plantations): the first about 9 hectars in San Marcello, in contrada Serra; the second one (11 hectars) in Jesi, in via Murri, not far from the ranch, also the third one in Jesi (Tabano area) of 5 and a half hectars.
In 2009 an additional investment to create a company oil mill, just in the center of San Marcello olive grove, which started working in the October 2011.
Both in the breeding, and the oil production the strategy is to aim at the top quality pay particular attention to the enviroment and the protection of the landscape. The aim is not to make large numbers, but to offer a top quality product to the customer at a right quality-price relation. The landmark target is thus a upper middle communitynon è quello di fare grandi numeri, ma di offrire al consumatore un prodotto di altissimo livello a un giusto e corretto rapporto qualità-prezzo. Il target di riferimento è quindi un pubblico medio-alto.
The game idea arises from a curious family story, a random choice, almost emotional. Actually this kind of breeding is nothing but easy and it took many years to build efficient structures, get the necessary experience and develop breding methods which matched market and priviledged clients, i.e. the hunters.
To repopulate we need animal who suddenly manage to get used to the environment they're input, who manage to defend from the predators and reproduce without liabilities. MFF, which is in one of the most important italian agricultural environments (Vallesina), takes directly care of the whole reproductive cycle. In years of work, among a carfeul and very unyielding selection of animals, Luca managed to breed a pheasant (today characterized by the mark "Italian Pheasant") which matches the needs of the hunting world.
Big enclosures have been built where the reproducers live outdoors. In November males and females selected for the reproduction are settled in specific cages. Starting from February, every week, 3.500-4.000 egg are incubated. In March the birth of the first chicks. The weaning is made in insulated and heated boxes. After 60-70 days they start getting fed with corn seeds and they get taken outdoors for the first time, in the pre-aviaries, where animals start having the first contact with earth, vegetation, plants and shrubs. After some weeks they're released in big aviaries, seven mt high, where there are trees, shelters and water springs. In the wild pheasants learn hiding on the trees and flying covering long distances.
The aim of this breeding system is to create a wild animal not a "ranch chicken". Hunter are proposed a top quality pheasant, very good for the free-range reproduction, perfect for hunting. Animals, got used to fly, look for food and water, manage to adapt and settle in the land they're input.
The company specialization is the pheasant, but MFF also breeds partridges, rock partridge and quails, both to fly and to eat. These ones (to eat) aer an other specialization: they're breeded on the ground, on a floor of sifted sawdust, in big covered boxes and fed with corn seed without any GMO. Reached the full growth the quail reaches half-pound. Cooked according to recipes suggested by the Company itself, it's savory and tasty.
The Oil Mill
Seven years ago a clear choice of industrial diversification has been made. In a proprietary field of San Marcello, where there were already a hundred of over fifty-year-old olive trees (Raggia, Mignola e Rosciola dei Colli Esini), has been decided to make a specialized olive grove, biologic, with typical cultivars (besides Leccino e Frantoio) to produce mono-varietal oils.
"Specialized" oil grove means that every plant row matches a specific cultivar. In the reaping phase will be possible having only Raggia, or Mignola, Rosciola etc. Also here the quality has been chosen first: the curve (i.e. the distance between two plants) is fifty-six sq. mt ; distance from street is over twenty mt. The topdressing is made only with organic substances and, according to the biologic policy document, no use of chemical substances and pesticides.
More recently also the other proprietary company fields have been cultivated, in Jesi, where there are already over threehundred twenty-year-old olive trees, so in the best productive period. Also in this case it's a specialized machinery and other small different particular varieties have been planted (Coroncina, Orbetana, Carboncella, Piantone di Mogliano, Piantone di Falerone, Leccio del Corno, Maurino, Pendolino, Moraiolo, ecc.) which will enrich the mono-varietal oils propose.
